1 Tb avocado or MCT oil
1 large onion, chopped
4 cloves garlic, minced or diced
3 cups cooked shredded chicken breast*
4 cups chicken stock
1 can green enchilada sauce
1 can diced jalapenos
1 tsp cumin powder
1/2 tsp black pepper
Dash of Lime juice (to taste)
1 can hominy, rinsed and drained

Sliced Radish
Fresh Cilantro
Directions:
1. Heat oil in a large pot over medium heat. Add onion and garlic; saute for 3-5 minutes.
2. Add remaining ingredients except hominy; bring to a boil. Cook for 5-10 minutes.
3. Add hominy and continue cooking for another 5 minutes.
4. Ladle into bowls and top with sliced radish and fresh cilantro (if desired).
