Baked Chicken Pizza

Recipe Submitted by MI40X Ambassador Mark Hope
1 Serving (but easily doubled!)

Ingredients:
1 chicken breast, filleted or sliced thin
4 oz sliced salmon
1/2 – 1 avocado, sliced
1 Tb parmesan and/or “pizza” cheese (mozzarella, provolone, etc)
Paprika and/or Chili Powder (optional, to taste)

Directions:
1. Preheat oven to 200 C (390 F) – fan forced if you have that option.
2. Lay chicken breast in an oiled baking pan.
3. Cover with a layer of thin sliced salmon, then cover with a layer of avocado.
4. Cover with cheese, and sprinkle with paprika and/or chili powder (if desired).
5. Bake for 20-25 minutes, or until chicken is done.
