Mexican Green Bean Salad

Servings: 4

INGREDIENTS

  • 1lb green beans
  • 1/2 cup olive oil
  • 2 jalapeno peppers, seeded and chopped
  • 1 tbsp vinegar
  • 2 tbsp lemon juice
  • 1 tbsp onion, minced
  • 1 tbsp parsley, minced
  • 1 tbsp fresh cilantro, minced

DIRECTIONS

  • steam the green beans for around 15mins until crisp tender, drain.
  • whisk the remaining ingredients together and pour over the green beans.  Allow them to marinate for at least 1/2 an hour.
  • serve either at room temperature or chilled.
