Cajun Dory

2-4 Servings

Ingredients:
4-8 filets dory (or same quantity of other firm fish)
1-2 Tb cajun seasoning (see below)
Oil to cover

2 cups of rice

Directions:
1. Lay fish in a baking tray. Sprinkle generously with cajun seasoning; rub gently into flesh on both sides.
2. Cover/submerge fish in oil. Cover tray with saran wrap and place in fridge for 2 hours (to overnight).
3. Remove fish gently from oil.
4. Heat 1 Tb oil in a pan over medium low heat. Add fish and cook 3-4 minutes (until browned).
5. Gently flip, turn heat to low, and continue cooking until done. Serve with fresh lemon.

Cajun Seasoning
Ingredients:
2 Tb paprika
1 tsp cayenne powder
1 tsp ancho or pasilla chili powder
1/2 Tb white pepper
1 tsp black pepper
2 Tb garlic powder
1 tsp dried thyme
1 tsp dried sage
1 tsp dried oregano
1 tsp salt
1 tsp cumin

Directions:
1. Gently mix all ingredients together. Don’t sneeze!
