Steak & Potato Soup (slow cooker)

Servings: 9 (1 1/2 cups each)

Prep Time: 20 mins

Cook Time: 8 hours, 30 mins (in slow cooker)

INGREDIENTS

  • 1lb boneless round beef steak
  • 1lb small red potatoes, cut into 1/4-inch slices (4 cups)
  • 2 medium celery stalks, chopped (1 cup)
  • 2 medium carrots, chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 tbsp beef boullion granules
  • 1/2 tsp pepper
  • 4 cans (1/4oz each) beef broth
  • 1 jar (6oz) sliced mushrooms
  • 1/2 cup water
  • 1/2 cup all-purpose (gluten-free preferably) flour

DIRECTIONS

  • cut beef into 1×1/4-inch pieces.  In a 5-quart slow cooker mix beef and remaining ingredients except the water and flour.
  • cover and cook on low heat setting for 8 to 9 hours
  • mix water and flour in small bowl, gradually stir into soup until blended.  Increase heat setting to high.  Cover, cook for around 30 mins or until slightly thickened.
