Rice Brownie

*Note: This is halfway between a moist brownie and a fluffy fudge

Ingredients:
3/4 c brown rice flour
1 egg white
1/4c fat free Greek yogurt (no sugar added)
8 Tbsp water
50 mg stevia (or to taste)
3/4 tsp baking powder

Spice options: Pick or combine
1 Tb unsweetened cocoa powder
1/2 tsp pumpkin pie spice
2 Tb PB2

Directions:
1. Preheat oven to 375 degrees.
2. Combine dry ingredients thoroughly in mixing bowl .
3. Blend egg whites, yogurt, and water.
4. Line baking pan with tinfoil and coat with coconut oil spray, and spread evenly with paper towel.
5. Mix liquid into dry ingredients.
6. Pour into baking pan, and bake for 15 minutes.
7. Let cool for at least 10 minutes before removing from tinfoil.
